Kansas City Dietitian Sees Red!

I am seeing red today.  I can’t believe the client who had the nerve to look me straight in the eye and say,… wait, that’s not what I had planned to talk about today.  How did I get on that subject again?

I’m not “Seeing” red; I’m “Eating” red.  That’s what I really meant to say.

So what’s so great about eating red?  If you review my Simple Diet (which by the way, is changing the way people live), you will see that Step 4 is all about colors.  Colors are found in fruits and veggies, nuts, and even in beans.

Red is an extremely important color.  The red color contains the magical chemicals ellagic acid and lycopene.

Ellagic Acids:  These are potent cancer fighters.  They are found in deep red foods such as the red raspberries, strawberries, cranberries, blackberries, pomegranates and walnuts.

Lycopene: A powerful antioxidant which fights prostate and breast cancer. This pigment gives tomatoes, red grapefruit and watermelon their red color.  Men who regularly eat tomatoes cooked in olive oil can reduce their risk of prostate cancer by 30%.

So, what are you gonna do about it?  Are you just gonna sit there and tell me you don’t like red foods?  Wanna take it outside?

Oh, wait, I keep forgetting.  I want you toe EAT red, not SEE red.  Sorry, this red thing just makes me so mad…..

Registered Dietitian

Hi, I’m Mary Kate. I love to try new foods and explore new restaurants and coffee shops, and even went on a homemade bagel-making kick this summer! My interest in nutrition started in middle school with my mom adding more veggies to our meals and making them taste interesting and fun, which sparked my interest to help her cook and learn more about how the food we eat impacts us every day. Over the years, I’ve witnessed firsthand the profound impact that proper nutrition and daily fueling can have on overall health. Like many of my clients, I have faced challenges with my own gut health and hormonal changes, so I can relate to the frustrations and fatigue that come with seeking relief. Through personalized care and tailored nutrition, I discovered the keys to my health, and my goal is to help others bring their sense of vitality back!
