Olive oil cooking spray
½ lb. Yellow squash (about 2 cups sliced)
½ lb. Zucchini (about 2 cups sliced)
½ lb. Eggplant (about 2 cups sliced)
2 tsp. olive oil
1 medium clove garlic, minced
½ Tbsp. water
Freshly ground pepper
1. Preheat grill or broiler and spray with cooking spray.
2. Wash sexy veggies. Cut ends off and cut in half lengthwise. Slice into ¼ inch strips, yielding 4-5 long strips. Eggplant strips will need to be cut in half.
3. Mix olive oil, garlic, water and pepper together in a medium bowl. Add veggies and toss to make sure all sides are coated.
4. Place veggies in one layer on grill or broiler pan. Grill or broil 3 minutes, turn veggies over and grill or broil 3 minutes more. Remove to a bowl.
