3 Cups of Roasted Chicken – Diced (Store-Bought Rotisserie Chicken Works Well – You can also substitute 3 cups of diced, cooked salmon.)
1 Cup Diced Celery
½ Cup Diced Red Onion
6 TBS Fat Free Miracle Whip
4 oz. Goat Cheese – Softened (Crumbled Feta Cheese Also Works Well)
2 T. Fresh Squeezed Lemon Juice
2 t. Dried Dill Weed
1 Pinch of Sea Salt & Freshly Ground Black Pepper to Taste
Combine mayo, goat cheese, lemon juice, dill weed, salt & pepper in a bowl until well combined. Add chicken, celery & onion to the salad dressing and gently mix until well combined.
Serve on warm pita bread, whole wheat toast, or inside of a whole grain wrap.
