Simple Diet Basic Eggs

Break 3 eggs, separate whites from yolks.  Stir whites.  Add back in 1 Tablespoon yolk.  Spray skillet with nonstick spray.  Brown chopped onions and peppers in skillet.  Add leftover veggies, stir to heat, add eggs.  Stir and cook until firm.  Top with a sprinkling of low fat cheese or a few “strings” of cheese stick.   Serve with a dish of mixed berries.
