4 boneless skinless chicken breasts (4 ounces each,
Use Smart Chicken or some other brand that has no additives or sodium added)
3 Tbsp. Extra Virgin Olive Oil
2 medium zucchini, shredded
3 slices 100% whole wheat bread torn into very small pieces
2 egg whites
½ cup shredded Swiss Cheese
¼ tsp pepper
Preheat oven to 400 degrees.
- Sauté zucchini in oil for 2 minutes or until tender. Add bread, egg, cheese, pepper. Mix.
- Slice chicken in center of breast to make a pouch. Spoon stuffing into pouch.
- Place stuffed chicken in 9 x 13 inch pan.
- Bake for 50 minutes.
