2 Cups of Broccoli Cole Slaw Mix (In the Bagged Salad Section of the Grocery Store)
1 Cup Halved Grape Tomatoes
1 TBS Fresh Jalapeno – Finely Minced (I Suggest Wearing Rubber Gloves)
2/3 Cup Hummus (Homemade or Purchased)
2 TBS Apple Cider Vinegar
2 tsp Extra Virgin Olive Oil
1 Pinch of Sea Salt & Freshly Ground Black Pepper to Taste
Combine jalapeno, hummus, vinegar, oil, salt & pepper in a bowl until well combined. Add broccoli slaw and tomatoes to the dressing and gently mix until well combined.
Serve on warm pita bread, whole wheat toast, or inside of a whole grain wrap.
