Simple Diet Basic Dinner

Coat bottom of baking pan with olive oil.  Add bite-sized pieces of skinless chicken breast (or other lean meat), peppers, broccoli, asparagus, fresh spinach, or any other veggie.  Cook in 350° oven for 20-30 minutes.  Stir a couple of times during baking time. Can also make this as a stove top stir-fry or on the grill.
