12 ounces Albacore Tuna in Water – Drained Well & Flaked
3/4 Cup Diced Celery
3/4 Cup Diced Gala Apples
3/4 Cup Toasted Walnuts – Chopped
2/3 Cup Fat Free Miracle Whip
2 tsp Low Sodium Soy Sauce
1/2 Cup Sweet Pickle Relish
2 TBS Fresh Squeezed Lemon Juice
1 TBS Minced Italian Parsley
1 Pinch of Sea Salt and Freshly Ground Black Pepper to Taste
Spread walnuts out on a cookie sheet and bake in a preheated oven at 350 degrees for 10 minutes. Let the walnuts cool, then coarsely chop.
Combine mayo, soy sauce, relish, lemon juice, parsley, salt, and pepper in a bowl until well combined. Add tuna, celery, apple and walnuts to the dressing and gently mix until well combined.
Serve on warm pita bread, whole wheat toast, or inside of a whole grain wrap.
