Thinking Outside the Box for Lunch

The goal is to give yourself a mid-day antioxidant boost and healthy protein to make it through the rest of the day feeling great.

Open a can of red beans, pinto beans, or some other favorite bean. Dump in some of your favorite salsa. Blend in a food processor. If you have some fresh onions or peppers or tomatoes, toss those in also. Spread bean mix on a whole grain tortilla or on 100% whole wheat bread. Add toppings like tomatoes or onions.

Another good way to use beans is to toss them on top of a green salad. Sprinkle with sunflower seeds and olive oil and balsamic vinegar dressing.
