Scrambled Eggs with Spinach in a Pita

2 servings egg substitute plus 2 egg whites
2 Tbs. nonfat milk
1/3 C. frozen spinach, thawed
2 scallions, chopped
Pepper to taste
Grated Parmesan cheese to taste
2 whole wheat pita breads

Combine all the ingredients except the pita in a bowl. Scramble in a nonstick skillet. Cut each pita in half. Heat in toaster and fill each with the eggs.

Serve with 1 serving fruit.
