French Toast With Fruit Sauce

4 slices 100% whole wheat toast or 3 slices Grains Galore
1 serving egg substitute plus 1 egg white
2 Tbs. nonfat milk with 1 Tbs. whey protein stirred in
½ teaspoon cinnamon
½ teaspoon vanilla

Heat nonstick griddle or large skillet. Spray with pan coating. Mix together eggs, milk, and vanilla in a pie plate or cake pan. Soak the bread in the mixture, turning to coat on both sides. Cook in the skillet over medium heat for about 3 minutes on each side, or until golden brown.

Fresh Fruit Sauce
¼ cup water
¼ cup raisins
½ ripe banana, cut up
1 orange, peeled and quartered
Juice of 1 lemon

Put the water in a saucepan and add the raisins. Bring to a boil. Puree the banana and orange in a food processor or blender. Add the raisin water and lemon mixture to the puree. Serve on French toast.
