Breakfast Roll-up

1 serving Egg substitute or 1 egg + 2 egg whites
Chopped green pepper and chopped onions (buy frozen to make it easy), sliced mushrooms, or other chopped veggies. Fresh spinach works well in this combination also.
1 Sprouted grain tortilla or whole grain tortilla
1 slice soy, alpine lace cheese, or fat free cheese OR 1 Tbsp shredded mozzarella cheese
1 Tbsp ground flaxseed
Salsa

Place veggies in pan coated with olive oil spray. Cook, stirring until softened. Add egg/egg substitute. Cook until done. Place mixture in tortilla; add ground flaxseed, salsa and cheese. Roll and heat in microwave for 30 seconds.

Serve with 1 serving of fresh fruit.
