Sexy Veggie Salsa

1-½ tsp. ground cumin
3 Tbs. fresh lime juice
2 Tbs. Extra Virgin Olive Oil
1 tsp. seeded, deveined, and minced jalapeno, optional (wear gloves when handling)
1 can white shoepeg corn
1 can black beans, rinsed
1 red bell pepper, diced
1 bunch cilantro, washed and chopped
1 bunch green onions, washed and chopped
1/2 cup cored, seeded, and diced Roma tomato

The following ingredients are optional:
½ medium avocado peeled, pitted, and diced
1 cup cooked quinoa (see recipe under Side Dish)
½ cup cooked edamame
2 chicken breasts, cooked and cubed
¼ cup prepared salsa, if desired
Salt and pepper to taste, if desired

 

 
1. Heat the cumin in a small skillet over low heat, stirring until warmed and fragrant (about 2 minutes). Remove from the heat and stir in the lime juice, olive oil, and jalapenos. Whisk together.
2. Stir all ingredients together.
3. Serve with whole grain chips or Veggie Crunchers.
