Chocolate Covered Blueberries

If you are looking for the best and easiest dessert, this is the one for you.  Start with the best dark chocolate you can find.  I use Belgium dark chocolate from Trader Joe’s or Lindt 85% cocoa dark chocolate.  This recipe is always best when you use fresh berries or cherries.  But, in the winter in Kansas City sometimes I have to use the dried fruits.  There are great choices at Costco.  Of course, beware, they will have added sugar.

Read the ingredient list on the chocolate.  Choose chocolate with no added fats except cocoa butter.  Also try to find chocolate with sugar as an ingredient instead of other sweeteners.  This is the most natural chocolate and the most healthful.

Break chocolate into pieces into microwave safe bowl. Heat in microwave for 1 minute.  Remove and stir well.   Return to microwave for 15-20 more seconds until chocolate is barely melted.  Do not overheat. 

Add fresh or dried fruit. Stir well.

Add fresh berries if possible.  If using fresh berries stir gently.  Do not break berries.  Dried berries are easier to work with but not as healthful. Drop by spoonfuls on cookie sheet lined with wax paper or parchment paper.

Refrigerate until hardened, about 30 minutes.  You can also use frozen berries.  Work quickly to keep berries from thawing while coating with chocolate.  Frozen and fresh berries will weep a bit but still taste great.  If you want to have an even easier dessert, just pour rinsed fresh berries in a small serving bowl.  Put a small chunk of dark chocolate in a small microwave safe bowl.  Place in microwave for about 20 seconds.  Drizzle melted chocolate over fresh berries.  This makes a beautiful and healthful dessert in no time at all.  Try this instead of a bowl of ice cream when you are watching TV tonight  Low in calories and tastes great.
